Triple Chocolate Granola

Although it might seem counter-intuitive, adding salt enhances it the flavour of the chocolate, so we highly recommend it!

Prep Time: 10 min

Oven Temperature: 180°C / 350°F / Gas Mark 4

Baking Time: 20 to 25 min

Cooling time:  2 hrs

Materials

  • 2 1/2 cups rolled oats
  • 1 cup unsweetened spelt puffs
  • 1/4 cup sunflower, canola or melted coconut oil
  • 1/2 cup cocoa
  • 1/4 brown sugar
  • 1/4 maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup milk chocolate flakes
  • 1/2 white chocolate flakes

Tools

  • kitchen scale or measuring cups and spoons
  • large mixing bowl
  • large spoon
  • baking tray (sheet)
  • baking (parchment) paper or a non-stick baking mat
  • kitchen towels or oven mitts
  • storing jar or airtight container

Instructions

1) Prep work

Preheat the oven to 180°C (350°F / gas mark 4). Line a baking tray (sheet) with baking (parchment) paper or a non-stick baking mat.

 

2) Mix the granola base

In a large mixing bowl combine the oats, spelt puffs, cocoa, brown sugar, maple syrup, oil, vanilla extract and salt. Mix until the oats and spelt puffs are completely coated in cocoa.

 

3) Toast the granola

Spread the granola base in an even layer on the prepared baking tray (sheet). Bake the granola for 20 to 25 minutes and every 5 minutes, so the granola toasts evenly and doesn’t burn. Allow the granola to cool for at least two hours or overnight.

 

4) Add more chocolate

After granola has cooled, add the white chocolate flakes, milk chocolate flakes and chocolate chips. Mix everything together, transfer the mixture into jars and apply the printable labels.

 

Tip: if you prefer a more cluster-like texture, add the chocolate flakes and chips immediately after baking. The chocolate will melt and create delicious chocolate granola clusters.

Storage and shelf life of the triple chocolate granola

You can keep the chocolate granola in a jar or an airtight container at room temperature for up to six months. The long shelf life makes granola a perfect homemade food gift.
