Start off a light summer meal or party with delicious herb-coated cheese balls. The foundation of this mouthwatering and quick-to-make appetiser is made with four different types of cheese: ricotta, cream cheese, ground parmesan and feta. The cheese mixture is tasty but still subtle enough to highlight the flavours of the fresh herbs, such as parsley, chives, dill and cress. A sprinkle of pink pepper and chilli flakes will add a hot and tingly note to the otherwise mild and creamy cheese balls. But be warned, if you try one it’s hard to resist nibbling them all!

Cheese Balls with Herbs
You can easily vary this recipe by replacing the herbs with spices (e.g. curry powder, sweet paprika, cayenne pepper, turmeric) or seeds (e.g. poppy, sesame or caraway seeds).

Chilling Time: 30 min
Yields: 18 – 20 cheese balls
For the cheese ball mixture
- 250 g (9 oz) ricotta
- 2 tbsp cream cheese
- 3 tbsp parmesan cheese, ground
- 150 g (5.3 oz) feta cheese
- 3 – 4 tbsp bread crumbs
- herb salt
- white pepper
- garlic powder
To garnish the cheese balls
- fresh chives
- fresh parsley
- fresh dill
- fresh cress
- pink pepper, crushed
- fresh Mediterranean herbs (e.g. rosemary, thyme, oregano, basil)
- chili flakes
1) Make the cheese mixture
Mix the ricotta and cream cheese until well combined. Add the grated parmesan cheese, crushed feta cheese and bread crumbs. Try to create a pliable consistency and gradually add more bread crumbs if the mixture seems too soft. Season with herb salt, white pepper, and garlic powder. Chill the cheese mixture in the freezer for 30 minutes to firm up.
2) Prep the herbs
Chop the different herbs finely and place them separately into small shallow bowls. Add the chilli flakes to the Mediterranean herb mix.
3) Roll the balls
Take 1 tbsp of the mixture and roll the cheese mix into a ball. Then roll each ball in the herbs until all sides are coated. Sprinkle the cress cheese balls with pink pepper. Chill the cheese balls until ready to serve.
Tips: Serve the balls with cocktail sticks or pretzel sticks so your guest can pick them up easily. You can make them a day in advance and store them covered with cling film (plastic/saran wrap) in the fridge.
