This easy cinnamon roll peach cobbler recipe is seriously the easiest dessert to prepare! It will literally take you 15 minutes to assemble, and it will be on the table in less than an hour from start to finish.
I just love how little effort it takes to create this delicious, warm, ooey gooey dessert. It’s a great last-minute dessert for sure!
It has a perfectly thickened peach filling with hints of cinnamon. And the topping consists of fluffy cinnamon roll bits that absorb some of the peach juice. Yummarillo!
I definitely recommend finishing the cobbler with a thick, sweet glaze and serving it with a dollop of whipped cream or a scoop of vanilla ice cream. They really take it to the next level.

Pillsbury cinnamon roll peach cobbler is truly simple! Fresh peaches are great in summertime; canned peaches allow us to make this treat year-round. Please see the recipe card below for exact measurements.
- Cinnamon rolls: Using premade cinnamon rolls is so much easier than making a cobbler topping from scratch. And the extra load of cinnamon is perfect for a summer comfort food dessert like cobbler. I like the refrigerated cinnamon rolls from Pillsbury, but you can swap in your favorite brand.
- Peaches: I love fresh peaches when they are in season. I recommend peeling them for the best texture (see my tips below). Canned sliced peaches are an excellent choice for the rest of the year. You can opt for peaches in either juice, light or heavy syrup, depending on how sweet you like your cobbler. Canned peaches in syrup will be sweeter than peaches canned in juice.
- Granulated sugar sweetens the dish.
- Cornstarch is the perfect thickener for cobbler. It turns the liquid from the fruit into a thick, velvety sauce.
- Cinnamon: Add a little ground cinnamon to the filling adds lovely warmth and aroma to this dessert.
How to peel fresh peaches
- Boil a large pot of water. Grab a pot big enough to fit several fruits at a time.
- Blanch peaches. Reduce heat to a simmer and carefully lower fruits into the water. Let them sit in the water for about 30 to 60 seconds.
- Transfer them to an ice bath. After scaling the peaches, you want to stop the cooking process immediately by lowering them in an ice water bath until they cool.
- Peel the skins off. The peach skin should slide off easily when you pull it away with your hands. You can also use a knife to take it off.

Optional ingredients
- Butter: Brush the cinnamon roll pieces with a little melted butter to keep them moist and give them a gorgeous, golden-brown color. However, this is optional.
- Icing: I like to drizzle my cobbler with the icing that comes with the cinnamon rolls. You can also mix a simple glaze of powdered sugar, water, and vanilla extract. Of course, cream cheese icing is tasty too.

- Other cinnamon roll flavors: Cinnamon rolls come in all kinds of varieties. Try orange rolls, cinnamon toast crunch, pumpkin spice rolls, or hot cocoa rolls.
- Lemon juice: If you prefer a bright, sunny flavor, season the filling with freshly squeezed lemon juice instead of cinnamon.
- Light brown sugar adds a deeper, warmer flavor thanks to the molasses. Feel free to swap this in instead of white sugar.

How to make cinnamon roll peach cobbler
Cinnamon roll cobbler can be thrown together in 20 minutes, and then you can let it happily bake away in the oven until puffy and golden brown.

#1: Mix filling
- Start by preheating the oven and greasing your casserole dish.
- Add the sliced peaches and sprinkle the cornstarch, cinnamon, and sugar on top, then stir to combine.

#2: Make topping
- Cut each cinnamon roll into 4 pieces and arrange them evenly over the peaches.
- If desired, brush with a little melted butter.

#3: Bake
- Bake the cobbler in the preheated oven until the fruit filling is bubbling and the cinnamon rolls have puffed up and look golden brown, about 40 minutes.
- To avoid burning the cinnamon rolls, cover the dish with aluminum foil the first 20 minutes of baking.

#4: Add glaze
- Let cool for 20 minutes. Drizzle the glaze over the cobber and serve warm.

- Cinnamon roll size: The recipe works with large (grand style) and regular-sized cinnamon rolls. Either way, cut each cinnamon roll in quarters and place them in an even layer to cook evenly.
- Cover with foil: Cover the casserole dish with tin foil for the first 20 minutes of baking. Then take off the foil for the last 20 minutes so the top can brown.
- Activate the cornstarch: It’s important to cook the cobbler long enough (until the peach filling bubbles from the heat). Otherwise, the cornstarch won’t have a chance to thicken the sauce.
- Bake long enough: Be sure to properly bake the cobbler so the bottom of the cinnamon rolls isn’t doughy and underbaked.
- How to tell when the cobbler is done baking: The Pillsbury cinnamon cobbler is ready when the top appears golden brown and the peach juices are bubbling. To test, insert a toothpick in the center of the cobbler. Your cobbler is done if the toothpick comes out clean (without unbaked dough).

FAQ
Do peaches need to be soft for cobbler?
Perfectly ripe peaches are usually soft enough for cobbler. But if you’re using harder fruit, you’ll want to bake the cobbler longer and add more sugar to make up for the lack of sweetness in the peaches.
With canned peaches, you won’t have to worry about how ripe/unripe your peaches are. I love canned peaches because it means we can enjoy this dish year-round!
Why isn’t my cobbler browning?
If the cinnamon roll topping isn’t browning enough, pop it under the broiler for a minute or two. Watch closely so it doesn’t burn.
How do I thicken cinnamon roll peach cobbler?
Cornstarch is the best thickener for peach cobbler with Pillsbury cinnamon rolls. When the cornstarch/flour mixes with the juices in the oven, the heat activates the cornstarch, thickening the juices into a beautiful sauce.
Tapioca starch and all-purpose flour are good alternatives to cornstarch.
The filling is runny. What can I do?
If the peach filling is thin and runny, it probably needs to bake a bit longer. Increase the cooking time by another 5 to 10 minutes.

Storage instructions
- Store: Keep leftover Pillsbury peach cobbler in an airtight container in the fridge for up to 4 days.
- Reheat: Warm in a 350°F / 180°C / gas mark 4 oven for 5 to 10 minutes or zap in the microwave in 30-second increments until heated through.

- 5 cups sliced peaches (about 5 large peaches, see Notes for canned peaches)
- 2 tbsp granulated sugar
- 1 tbsp cornstarch
- 2 tsp ground cinnamon
- 1 can (17.5 oz) refrigerated cinnamon rolls (large cinnamon rolls, see Notes)
Instructions
- Prepare for baking. Preheat the oven to 350°F / 180°C / gas mark 4. Grease a 9x13 inch / 23 cm x 33 cm or 3-quart casserole dish with butter or non-stick cooking spray.
- Combine the filling. Place the peach slices into the greased baking dish and add the cornstarch, sugar, and ground cinnamon. Stir until the fruit is well covered and spread out into an even layer.
- Cut the cinnamon rolls. Take the cinnamon rolls out of the package and set the icing aside. Cut each cinnamon roll into fourths and place the pieces in an even layer on top of the peach filling in the baking dish.
- Bake the cobbler. Cover the casserole dish with aluminum foil and bake for 20 minutes. Then remove the foil and continue baking for another 20 to 25 minutes. The cobbler is ready when the cinnamon rolls are golden brown, and the center of the cobbler is cooked through. Remove from the oven and set aside to cool slightly, for 20 to 30 minutes.
- Mix the icing. While the cobbler cools, prepare the cinnamon icing according to the package instructions. Drizzle the icing over the warm cobbler.
- Serve. Scoop the warm cinnamon roll peach cobbler into bowls and serve warm with a scoop of vanilla ice cream or whipped cream. Enjoy!

- Canned peaches: You can also prepare the recipe with 2 x 15-oz cans sliced peaches. You can use peaches canned in juice, light syrup, or heavy syrup – depending on how sweet you want the cobbler to be.
- Tip: When using canned peaches, add 1 can with juices and the other can without the juice. Omit the sugar if using peaches canned in syrup.
