And honestly, there’s nothing too fancy about it. It doesn’t use any special ingredients or seasonings. It’s simply classic baked mac and cheese with a delicious cheddar cheese crust on top.

That’s not to say it’s not special. In fact, Popeyes mac and cheese is perfectly rich, creamy, and cheesy. You get delicious elbow macaroni and lush sauce in every bite, giving the perfect balance of soft and chewy.

Ingredients

Let’s talk about Popeyes mac and cheese ingredients. It’s the perfect recipe when you crave a homey, comforting dish. See the recipe card at the end of the post for exact measurements.

  • Pasta: Popeyes uses classic elbow macaroni, but you can use any short pasta you have and like.
  • Butter + flour: This combo makes up the roux, which helps to thicken the sauce. You need all-purpose flour and salted or unsalted butter.
  • Milk makes up the bulk of the sauce. Any kind of milk will work. I like whole milk; however, skim or 2% are also good choices.
  • Heavy cream makes the cheese wonderfully rich and creamy.
  • Cheese: Popeyes mac and cheese only calls for one cheese, sharp aged cheddar. But because cheddar on its own can make the sauce a bit grainy, I like to add gouda, which is an excellent melting cheese and creates a super smooth texture.
  • Seasonings: Salt, pepper, paprika, and some garlic powder give this Popeyes macaroni plenty of flavor.

How to make Popeyes mac and cheese

This Popeyes mac and cheese recipe is quick + easy and has the potential to become a new family favorite. You love the creamy sauce with those crispy baked cheddar bits on top!

#1: Prep

  • Preheat the oven to 350°F.
  • Grease a 9 in x 13 in baking dish with butter, set aside.

  • Bring a large pot of salted water to a rolling boil. Add the noodles and cook until just al dente.
  • Drain the pasta and stir in 2 tablespoons of butter until melted to prevent sticking.

  • As the pasta cooks, combine the shredded cheddar and gouda.
  • Reserve 3 cups for the sauce, 1 1/2 cups for the inner layer, and 1 1/2 cups for topping.

  • Melt the butter over medium heat in a large saucepan. Once melted, sprinkle in the flour and whisk until combined.
  • Cook for 1 to 2 minutes, whisking constantly.

  • Continue cooking until the sauce has thickened.

  • If desired, broil for 2 to 3 minutes.

  • Season the pasta water: The key to excellent macaroni and cheese is to season the cooking water with salt. I recommend 2 teaspoons per quart of water.
  • Don’t overcook the pasta: If you plan on baking your Popeyes macaroni and cheese, cook the noodles until just al dente because they will continue cooking in the oven.

  • 1/2 cup / 1 stick / 115 g / 4 oz butter, plus some for greasing and the pasta
  • 1/2 cup / 120 g / 4.2 oz flour
  • 2 cups / 500 ml / 16 fl oz milk
  • 1 cup / 240 ml / 8 fl oz heavy cream
  • 4 cups / 450 g / 16 oz shredded sharp cheddar
  • 2 cups / 225 g / 8 oz shredded gouda
  • 1 tsp salt

  • 1 tsp garlic powder

You’ve got an error in the instructions. You refer to 1 1/2 cups of cheese for the inner layer, but then the instructions say only 1/2 cup.

I made this pretty much as written. I did use the dry mustard instead of the salt, and I will admit, it needed more salt. Maybe not a tsp. worth, but a few pinches more would have done some good.

Although this didn't really capture the Popeye's mac and cheese flavors for my family, we all still thoroughly enjoyed it and I'd be remiss if I didn't say that this was the richest mac & cheese I've ever eaten. It was decadent.

The 4 cups of cheddar adds plenty of salty flavor. I made a third time today, replacing the salt with ground mustard and it was perfection. I also use either cream cheese or mozzarella instead of gouda.

What about the salt, pepper, garlic and paprika??? They’re in the ingredients list, but not the recipe. I made it all the way to the end and it never asked for them, so it’s super bland. ☹️
