Ingredients

For the tomato sauce

  • 500 g (2 cups) unflavored tomato sauce, smooth or chunky according to your preference
  • 6 fresh tomatoes, washed, hulled and cut into chunks
  • 1 small onion, peeled and chopped
  • 1 laurel leaf
  • 1 tbsp of each fresh thyme, oregano, sage, rosemary parsley and basil, chopped (If using dried herbs only use 1 tsp of each herb.)
  • 1 tsp balsamic vinegar
  • 1 tsp brown sugar
  • 1/4 tsp garlic powder
  • a pinch of allspice
  • a pinch of nutmeg
  • salt
  • black pepper

For the gnocchi bake

  • 400 – 500 g (14 – 18 oz) gnocchi
  • 125 g (4.4 oz) mozzarella, grated
  • 100 g (3.5 oz) cheddar, grated
  • butter or oil to grease the baking dish

Instructions

  1. Cook the tomato sauce. Heat the olive oil in a heavy bottom sauce pan over medium high heat for a minute. Add the onion and cook for 3 minutes. Then add the sugar, laurel leaf and herbs, except the basil and parsley, and sauté for another minute. Pour in the tomato sauce and tomato chunks. Season with salt, black pepper, garlic powder, allspice, nut meg and balsamic vinegar. Reduce the heat to low flame and continue to cook the sauce for 30 to minutes while stirring the sauce occasionally. Add the parsley and basil.
  2. Bake the gnocchi. Grease the bottom and the sides of a baking dish with oil or butter. Pour in the tomato sauce and add the gnocchi. Give a quick stir, so the gnocchi are completely covered in sauce. Bake for 10 minutes in the preheated oven. Remove the dish from the oven and sprinkle with the grated mozzarella and cheddar and bake for another 10 minutes or until the cheese has completely melted and looks golden brown. Serve the gnocchi bake warm with salad.
