Ingredients
Bisquick chocolate chip cookies with pancake mix are going to be your new favorite thing. The recipe calls for simple baking ingredients you likely have on hand. Please scroll to the recipe card below for exact measurements.
- Original Bisquick mix is a pre-made baking mix made of flour, cornstarch, shortening, and leavening agents. It allows the cookies to rise and the shortening also provides a bit of extra moisture.
- Chocolate chips: Of course, we have to add plenty of chocolate chips to these cookies. Semisweet is classic, but you could use any other flavor. White, milk, or dark… try them all. You can’t go wrong with these pancake mix chocolate chip cookies!
- Unsalted butter: Be sure to let your butter sit out for 15 minutes to soften a bit. Softened butter creates a smooth, well-mixed cookie dough.
- Brown sugar gives these cookies a wonderful chewiness and a subtle toffee note.
- Egg: In case you didn’t know, you should bring eggs to room temperature when adding them to a dough. Room-temperature eggs incorporate better than cold eggs from the fridge.
- Vanilla extract: For the best taste, avoid imitation vanilla flavoring, and opt for pure vanilla extract instead.

Baking tips
I can’t wait for you to make these Bisquick chocolate chip cookies! Here are some tips and tricks to ensure yours turn out perfect and delicious.
- Bisquick is key. This recipe works so beautifully because of the pancake mix. It adds flavor and moisture and creates the perfect soft, thick texture.
- Measure the baking mix correctly. Too much Bisquick will lead to dense or crumbly cookies that barely spread. A kitchen scale works best, but if you don’t have one, use the spoon and level method.
- Butter consistency: To achieve thick cookies, the butter should be at a cool room temperature. I recommend taking the butter out of the fridge for 15 to 20 minutes before mixing the dough. If your butter is overly soft or greasy, the cookies will spread more and turn out flatter.
- Use light cookie sheets. This Bisquick cookie recipe bakes best on light-colored aluminum sheets. Dark cookie sheets bake hotter and can burn the bottom of the cookies.
- Be sure not to overbake these cookies. The centers should be soft, and the edges barely start to set and brown.
- Add extra chocolate chips. Stick a few additional chocolate chips on top of the cookies right after they come out of the oven. That way, your cookies will look as good as they taste.

Variations
- Different chocolate flavor: You can make this Bisquick chocolate chip cookie recipe with any flavor of chocolate chips you desire. White, milk, peanut butter, or butterscotch would be super delicious here. Grab a pack of bittersweet or dark chocolate chips for the richest chocolate flavor.
- Nuts: Add 1/2 cup of your favorite finely chopped nuts (walnuts, pecans, almonds) for a little crunch.
- Roll in cinnamon sugar: For a snickerdoodle-style cookie, roll the dough balls in cinnamon sugar before baking.
- Chocolate drizzle: Drizzle melted chocolate over the baked, cooled cookies for an over-the-top finish.
