One of the things we love about winter is the abundance of fresh citrus fruits. One of the dishes we love to make over and over again is this light and fresh orange grapefruit salad. The salad incorporates citrus fruits in a few different ways. We mixed lettuce of the season with orange and grapefruit wedges, and used orange oil and lemon juice to mix up a tangy vinaigrette. The crumbled goat cheese adds a touch of creaminess while the pink pepper deliciously contrasts the sweetness of the oranges.

Orange Grapefruit Salad with Goat Cheese and Pink Pepper
To vary things a bit, replace the goat cheese with firm cream cheese or feta, and use add-ins such as cranberries or toasted almond slices.
Prep Time: 20 min
- 500 g mixed lettuce of the season, cleaned and chopped. We used lamb’s lettuce, beet greens and baby spinach.
- 2 oranges
- 2 grapefruits
- 100 g (4 oz) goat cheese, crumbled
- 1 tbsp pink peppercorns
- 3 tbsp freshly squeezed lemon juice
- 4 tbsp orange or olive oil
- 1 tsp Djion mustard
- salt and black pepper to taste
1) Cut citrus wedges
To cut the citrus wedges, trim off the top and bottom of the oranges and grapefruits. Peel the citrus fruit by cutting away the skin and pith – that’s the white part underneath the skin. Try to follow the shape of the fruit. Carefully cut out wedges by placing the knife between the membrane and the flesh of the fruit.
Geeky fact: This type of wedges are also called suprèmes.
2) Make the dressing
To make the dressing, mix together the lemon juice, orange oil, and Dijon mustard. Season with salt and pepper according to your personal preference, 1/2 tsp of salt and 1/4 tsp of pepper is a good starting point.
3) Finish the salad
Add the lettuce, orange wedges, grapefruit wedges, crumbled goat cheese and pink pepper into a large salad or mixing bowl. Drizzle on the dressing and gently toss the salad together. For decorative effect, garnish the salad with extra citrus wedges, goat cheese crumbs and peppercorns. Serve immediately and enjoy with fresh bread.
