Ingredients
Gluten-free cranberry blondie bars
- 2 cups / 200 g / 7 oz blanched almond flour
- 1/4 cup / 55 g / 1.9 oz coconut flour
- 1 tsp baking powder
- 1/2 cup / 115 g / 4 oz coconut oil (can sub for butter if not dairy-free)
- 1/2 cup / 100 g / 3.5 oz granulated sweetener of choice* (see note below)
- 2 eggs (UK & Europe: M / US, CA, AUS & NZ: L)
- finely grated zest of 1 organic orange
- 1/2 tsp ground ginger (can sub for cinnamon)
- 1 tsp vanilla extract
- 1/2 cup dried cranberries** (see tip below)
Dairy-free cashew cream cheese frosting
- 2 cups / 230 g / 8 oz cashews, soaked in water for 3-4 hours, drained
- 1/3 cup / 100 g / 3.5 oz coconut cream, only the solid part, no liquid
- 1/4 cup / 30 g / 1 oz cocoa butter disks, melted
- 15 to 20 drops liquid stevia (or 5 tbsp maple syrup/honey)
- 2 tsp lemon juice
- 1 tsp vanilla extract

Bake the gluten-free cranberry bars
- Line a 9-in / 22 cm square baking pan/tin with parchment/baking paper.
- Preheat the oven to 375°F / 190°C / gas mark 5.
- Melt the coconut oil or butter in the microwave or on the stove top.
- Add the almond flour, coconut flour, sweetener, baking powder, orange zest, and ground ginger into a large mixing bowl. Stir to blend.
- Add the dried cranberries, melted coconut oil/butter, eggs, and vanilla extract. Stir until combined.
- Transfer the batter into the prepared baking pan/tin and bake for 25 to 30 minutes or until the top looks golden brown.
- Let cool in the baking pan/tin for 20 minutes. Then move the keto blondie to a wire rack and cool completely.
Make the dairy-free cream cheese frosting
- Soak the cashew nuts in water for at least 3 to 4 hours. Drain well.
- Add the cashews, coconut cream, melted cocoa butter, liquid stevia, lemon juice, and vanilla extract to a high-speed blender. Process on high until very creamy.
- Fill the vegan frosting into a bowl and cool until spreadable.
Assemble the gluten-free cranberry bliss bars
- Fill 1/3 cup of frosting into small disposable pastry/piping bag.
- Spread the rest over the blondies using a butter knife or spatula.
- Sprinkle with cranberries.
- Snip off the tip of the pastry/piping bag and drizzle the frosting over the cranberry bars.
- Cut the cranberry bliss bars into triangles or squares.
