4th of July watermelon feta appetizer
My patriotic watermelon feta skewers not only taste amazing, but look perfectly party-ready and your guests will love them.
They are wonderful for 4th of July parties, Memorial Day BBQs, and Labor Day gatherings, or even just as a snack for yourself – they are sure to be a hit!
The recipe is ready in minutes and requires only 3 simple ingredients, star-shaped cookie cutters, and a bunch of toothpicks. You can even prep them ahead of time and refrigerate them until ready to serve.
Ingredients
- watermelon – You can use 1 small watermelon or half a large watermelon.
- 12 oz feta cheese – The creaminess of the feta contrasts beautifully with the watermelon. You want a block of feta cheese, not feta crumbles.
- 24 blueberries – My recipe makes about 24 watermelon feta skewers, so you want 24 blueberries. Select blueberries that taste sweet and juicy.
- star cookie cutters – to cut out the watermelon and feta stars. I used a 2.7-inch / 7 cm cutter for the watermelon and a 2-inch / 5 cm cutter for the feta stars. Of course, it’s also possible to cut the fruit and cheese the same size.
- skewers – hold the appetizer together. I opted for regular toothpicks. American flag toothpicks or bamboo cocktail picks would also look lovely.
Variations
- Herbs: Watermelon feta stars taste super refreshing, garnished with fresh mint, basil leaves, or dill.
- Balsamic reduction: For a little tang, drizzle the assembled skewers with balsamic reduction.
- Red pepper flakes: Like a little heat? sprinkle your watermelon appetizer with red pepper flakes.
- Different cheese: If you aren’t a fan of feta, try the recipe with sliced cheese or another cheese that’s easy to cut into shapes, such as Monterey Jack, white cheddar, Havarti, provolone cheese, or Swiss cheese.
Instructions
1. Slice watermelon
To slice, place the watermelon on a board and hold it firmly down with one hand. Use a long, sharp knife and cut your watermelon into 1/3-inch / 1 cm thick slices.
2. Cut out watermelon stars
Using a star-shaped cookie cutter, cut out stars from each watermelon round. Place the stars closely together so you can get as many stars out of each slice as possible.
Tip: I like to use the leftovers to make delicious watermelon cooler. It takes 5 minutes, tastes super refreshing, and nothing goes to waste.
3. Slice feta
Cut the feta cheese block lengthwise into 1/3-inch / 1 cm thick slices.
Cut out feta stars. Use a star cutter to cut out star shapes from the feta cheese slices. Again, place the cuts closely together to make the most of each slice.
Tip: Crumble the cutaways into a salad, make whipped feta dip, or try marinated feta cheese.
4. Cut out feta stars
Use a star cutter to cut out star shapes from the feta cheese slices. Again, place the cuts closely together to make the most of each slice.
Tip: Crumble the cutaways into a salad, make whipped feta dip, or try marinated feta cheese.
5. Assemble the skewers
Place a feta star onto a watermelon star and top with a blueberry. Push a skewer or toothpick right down the center to hold everything together.
6. Serve
Arrange the watermelon stars on a serving platter. Serve them right away or refrigerate until ready to eat. Enjoy!
Make-Ahead & Storage
- Make-ahead: You can prep the appetizer 1 day ahead of time. Cover the tray loosely with plastic wrap and keep in the fridge until it’s party time!
- Store: Store leftovers well covered in the refrigerator and eat within 1 to 2 days.
