This refreshing and healthy watermelon cooler is the ultimate summer drink. Made with seedless watermelon, mint, and lemon juice, it’s exploding with thirst-quenching watermelon flavor.

Watermelon mint cooler
When I recently made these cute watermelon feta skewers, I ended up with lots of leftover watermelon. So I wondered what would happen if I popped it all into a blender and pureed until liquid.
The best watermelon drink, that’s what’s happened! Once I tried it, it was love at first sip and instantly became my new favorite summer drink! Here’s why it’s so great:
3 ingredients: It only takes 3 easy ingredients to whip this up. And honestly, you could skip the lemon and mint and prepare it with just watermelon.
Incredibly refreshing: The drink is full of fresh watermelon flavor and a subtle cucumber note.
Wholesome: My recipe doesn’t have any extra sugar added. The sweetness of the watermelon is enough.
Crowd-pleaser: This watermelon mint cooler is a crowd-pleasing summer drink that young and old will love. You want to have this all summer long!
Ingredients
- 1/2 seedless watermelon – Ripe watermelons have the best aroma, so make this recipe during watermelon season! Be sure to select a watermelon that has a deep green color (as opposed to light yellow or pale green). To save time, you can also grab pre-cut watermelon chunks.
- 2 tablespoons fresh lemon juice – That’s the juice from half a lemon. Freshly squeezed lemon juice is a must for this homemade watermelon cooler, but you can use bottled lemon juice if it’s easier for you.
- 1/8 cup fresh mint leaves – The mint is optional, but it makes the drink extra refreshing and creates a pretty garnish. Select mint that smells fragrant and has firm leaves.
- ice cubes – These are optional as well, but I believe you’ve got your drink served over ice on these hot summer days!
- edible flowers – for the picture-perfect garnish. I picked a few daisies from my garden.
Variations
- Herbs: Basil, lemon balm, and lemon verbena are good substitutes for mint.
- Citrus: For a fun twist, swap the lemon juice for lime juice, blood orange juice, or grapefruit juice.
- Cucumber: Boost the freshness and add 1/2 peeled cucumber when blending the watermelon.
- Fruit: Create tasty flavor combinations by adding other fruits to the recipe. Pineapple, blueberries, raspberries, and strawberries taste delicious in this cooler recipe.
- Coconut: Add 1/2 cup coconut cream for a tropical hint of creaminess.
Instructions
1. Scoop the watermelon
Using a large spoon, scoop out the watermelon down to the rind. Place the watermelon flesh into a blender. Pour the liquid left in the watermelon rind into the blender as well.
2. Blend
Add the mint and lemon juice to the blender. Pulse until the watermelon is completely pureed and everything is well combined.
Watermelon foam: Watermelon gets very foamy as you puree it. The foam will dissipate eventually, but you can also spoon it off if you prefer. I don’t mind the foam and serve my watermelon cooler with the foam on top.
3. Add ice
Fill your drinking glass with ice all the way to the top.
Chill your glasses: I like to pop my glasses in the fridge for an hour or so. It really helps to keep the drinks nice and cold for longer.
4. Pour
Pour the watermelon juice on top of the ice into the glass.
5. Serve
For extra pizzazz, garnish each glass with a spring of mint and an edible flower. Serve right away and enjoy!
Storage
Leftover watermelon mint cooler stores well. Keep it in an airtight bottle or pitcher, and it will last in the refrigerator for 2 to 3 days. If the drink separates, give it a quick stir before drinking.
