One Pot Rice with Chicken and Peppers
Instead of Arborio rice you can also prepare the one pot rice with chicken with Carnaroli, which is another type of risotto rice, or paella rice, such as Bahia, Balilla, Bomba, Senia, or Calasparra.

Servings: 4 – 6
- 3 boneless skinless chicken breasts (about 200 g / 7 oz each), cut into pieces
- 250 g (1 1/2 cups) arborio rice
- 800 ml (3 1/3 cups) chicken or vegetable stock
- 1 onion, chopped
- 1 garlic clove, minced
- 3 bell peppers, cut into squares
- 4 tbsp canola or sunflower seed oil
- black pepper
- 1 tsp paprika
1) Fry the chicken
Add the canola oil into a heavy-bottom pan and bring to a mild simmer. Once you start smelling the oil, add the chicken pieces and brown on all sides while stirring constantly, which takes about 5 minutes. Add the onion and garlic and fry for another 3 minutes. The add the peppers and continue to cook for 3 to 4 minutes. Sprinkle the rice on top, and fry for another minute. Stir constantly as the rice will absorb the liquids in the pan.
2) Cook the dish
Pour one third of the broth into the pan. Then add salt, black pepper and paprika and bring to a boil. Pour in another third of broth, bring to a boil again. Add the remaining third of broth and reduce the heat to a simmer. Let the rice cook for 20 minutes while stirring occasionally. Season to taste before serving.
